Recipe: Veggie Bliss Balls
INGREDIENTS
One cup rolled oats
2x medium carrots (keep the skin on for more fibre)
0.5 cup baby spinach
0.25 cup pepitas (pumpkin seeds)
0.25 cup sunflower seeds
0.25 cup desiccated coconut
2x tablespoons chia seeds
0.25 LSA (Linseed/soy and almond mix)
5x medjool dates
Shake of cinnamon
Shake of nutmeg
For rolling: Sesame seeds, desiccated coconut or chia seeds
METHOD
1. Place the veggies in a food processor or thermomix and process until finely chopped
2. Add all remaining ingredients and pulse until the mixture comes together in a large ball
3. Form into balls and roll in your seed of choice or coconut
4. Store in the fridge and enjoy 1-2 with a morning or afternoon coffee or tea at work
