Recipe: Veggie Bliss Balls

INGREDIENTS

  • One cup rolled oats

  • 2x medium carrots (keep the skin on for more fibre)

  • 0.5 cup baby spinach

  • 0.25 cup pepitas (pumpkin seeds)

  • 0.25 cup sunflower seeds

  • 0.25 cup desiccated coconut

  • 2x tablespoons chia seeds

  • 0.25 LSA (Linseed/soy and almond mix)

  • 5x medjool dates

  • Shake of cinnamon

  • Shake of nutmeg

  • For rolling: Sesame seeds, desiccated coconut or chia seeds

METHOD

1. Place the veggies in a food processor or thermomix and process until finely chopped

2. Add all remaining ingredients and pulse until the mixture comes together in a large ball

3. Form into balls and roll in your seed of choice or coconut

4. Store in the fridge and enjoy 1-2 with a morning or afternoon coffee or tea at work
