Recipe: Salmon Tacos With Avocado Salsa & Garlic Dressing

INGREDIENTS

  • Tbsp smoked paprika

  • 2x tsp of cumin

  • Red chilii flakes

  • Salt and pepper

  • 500g raw salmon (~4 thinly cut pieces)

  • 8-12x small corn tortillas/soft tacos

  • 1x large avocado, diced (small pieces)

  • 2x large tomatoes, diced (small pieces)

  • 0.25 of a purple cabbage, thinly shredded

  • 2x lime

  • 2x garlic cloves, finely chopped or ground

  • Cup of yoghurt (250g)

  • Bunch of coriander, chopped

METHOD

Preheat oven to 220°C.

Place salmon on baking tray with baking paper. Lightly spray with olive oil and season with paprika, cumin and chili flakes.

Bake for ten minutes until cooked through.

Whilst the fish is cooking, add garlic to yoghurt in a small jar or bowl and shake/mix.

Add avocado, tomato, juice of one lime and season with a little salt and pepper.

Use a fork to flake the salmon.

Heat your soft tacos in the microwave for 20-30 seconds

Add cabbage to taco, salmon and salsa. Drizzle some garlic sauce and then decorate with coriander.
